I freaking love the rich cheddar sauce recipe and am always trying to create new dishes using it. This not only taste good, but it’s amazingly pretty too!
Ingredients
- 1 squash , julienne or spiral cut, however you prefer
- 1 carrot, shred using peeler
- ½ yellow pepper, julienne
- ½ red pepper, julienne
- 1 sweet corn, cut corn from cob
- ¼ cup <a href="http://www.goneraw.com/recipes/281-Rich-Cheddar-Sauce">cheddar sauce</a>, add extra water
- 5 olives, mashed
- salt/pepper
Preparation
Toss first five ingredients along with salt and pepper. Add cheddar sauce (the amount here can obviously be played with according to your preference). Garnish with mashed olives (optional, but the saltiness of the olives makes a nice contrast to the sweetness of the peppers and corn). Serve and enjoy!
**I have this requiring a food processor because of the rich cheddar sauce recipe.

mmm, it was so good, I recommend trying it with the cheddar sauce and a dash of olive oil and ceyanne-pepper for a final touch. I also had some leek which I cut on top. So tasty and fulfilling.
