Dreamy Vanilla Apricot Pie
Serves 4
Lovely apricot/vanilla/cinnamon fruit pie.
Ingredients
- 1/2 cup coconut, dried
- 1/2 cup sunflower seeds
- 1/2 cup dates
- 1/2 cup dried apricots
- FILLING
- 1 banana
- 1/2 cup apricots
- 1 inch piece vanilla pod
- 1/2 tsp cinnamon
- 1 tsp psyllium or flaxseed
- 1/4 cup ground seed or nut
- pinch sea salt
- cinnamon for dusting and seasonal fruit to decorate pie
Preparation
CRUST Soak the dates and apricots in warm water for a few minutes to soften. Meanwhile grind up the coconut and sunflower seeds and then place in the food processor. Add the soaked fruit and process until you have a sticky mass.
Press the crust mixture into a lined flan dish.
FILLING Soak the apricots for a few minutes in warm water and then blend with all the other ingredients, adding the ground seed once the blender is running so that you can thicken up the mixture to a thick puree. Pour into the crust and decorate with your favourite seasonal fruit and dust with more cinnamon. Yum.

I’ve noticed that your recipes contain alot of nuts/seeds/grains. Is there anything I can substitute in this recipe?

How many apricots in the filling??? half a cup???

Waterbaby, I’ve fixed that now, it’s half a cup. Rawkidchef, actually I use very few seeds/grains in my recipes, hardly ever any nuts. I try to keep my recipes low fat and use seeds that have a cooling effect on the liver.
