Creamsicle Ice Cream
Makes 1 pint
When deciding what flavor to explore with my young coconuts, a smooth, rich, creamy orange creamsicle was the first I could think of. I had no idea, however, it would turn out so good. It tastes just like a creamsicle from the Good Humor truck, but you’ll never believe it until you taste it! It looks just like it too. Also, you don’t need anything else to add to the coconut base because the orange balances out the coconut flavor.
PS I pictured this in a coconut bowl I made!
Ingredients
- 3 young coconuts, use only ones with thick, pure white meat
- ½ cup filtered water (can also use fresh coconut water)
- ½ cup agave nectar
- ½ an orange
Preparation
1. Scrape the flesh from the coconuts. Choose coconuts with pure white meat, and it might be jelly like but as long as it’s white it’s fine. If the meat is too tough to scrape with a metal spoon, you will find after a nudge with a spoon you can pull the meat out with your hand.
2. Add all the meat to a vita-mix or other blender, along with the water. Cut an orange in half and squeeze as much juice and some of the pulp from half of the orange into the blender. Add the agave.
3. Blend on high until completely smooth. The result should be a runny cream, with a mild milky orange color.
4. Freeze the mixture for an hour or slightly less if it starts to crystalize, and then pour the mixture into a running ice cream maker and let it process for a half hour to 45 minutes. The beautiful result may be thick balls or slightly thinner, but it’s extremely delicious either way. An alternative to an ice cream maker is to pour the mixture into ice cube trays and freeze for 2-3 hours, and then blend the cubes in a blender or food processor until creamy. You may need to add a tad of water to the blender/food processor, but try to use a very small amount.
5. Scoop into bowls or serve. Any leftovers should be refrigerated and before serving, you should repeat Step 4.

Thanks rachel! I had the dehusked young coconuts, which made it easy to do a clean split in half and make better bowls.

Well, I correct that, I have everything but a monster blender. It will be somewhat grainy in mine, but the taste should be the same. I am big on texture and look forward to getting a super blender.

Let me know how you like it Strawberry! As long as you blend it long enough, it will be creamy. I don’t think you have to have a vita-mix. :)

This looks so good. Does anyone know where I can get green young coconuts? Not the ones that are white and cut with the point on top. I had used 3 of those and noted to my husband that I thought it tasted like formaldehyde. I figured that was just what raw coconut tasted like since I’d never had them before. But then I read somewhere that they actually dip those white coconuts in formaldehyde before shipping to keep it from rotting!!! Did you guys know this? I was mortified. Anyway, where can we buy green coconuts, which are really the whole intact coconut? Thanks.

It was a super treat!!! When I finish this up in a couple of days, I will use the recipe and put in fresh peaches and almond flavoring instead of the orange. Doesn’t that sound yummy also? Thank you for posting the recipe.

Amyglad, yes I know the coconuts are dipped it’s because the husk will discolor. You can order them but it’s really expensive. I’m not sure where to get green ones but I order mine dehusked (doesn’t have a white husk or green outer covering, but looks like a mature coconut, except the shell is lighter) You’d be surprised at how much thye cost. I did find a website that will ship coconut palm trees to people (wink wink) lol But I don’t live in the tropics so that isn’t an option. But I understand what you mean by the formaldehydes, I can’t tolerate that flavor or smell.

I had a beverage at The Greenery (raw restaurant) called a “Creamsicle,” and it was made only of thai coconut and orange. It was out of this world!! So I can only imagine what this ice cream tastes like!!!
