Crust-free Apple Pie and Custard
Serves 1-2
Nice and light dessert that tastes like apple pie. Picture shows optional crumble.
Ingredients
- APPLE PIE MIXTURE
- 1 apple
- 1/2 cup figs, soaked for a few minutes to soften
- 1 tsp psyllium
- dash cinnamon
- pinch sea salt
- CUSTARD
- 1 banana
- 1 pear
- 1 tablespoon lucuma
- pinch sea salt
- 1cm vanilla pod (opt)
Preparation
This really tasted like apple pie and is nice and easy to digest and is completely nut and seed free.
Blend the apple mix ingredients until you have a puree. Pour into serving bowl and place in the fridge to set and thicken.
Blend all the custard ingredients with warm water if you like a warm custard and pour over the apple mixture. Enjoy.
I like to have the apple mixture made up in the fridge and then make fresh custard when I want dessert.
CRUMBLE (OPT) 1 cup sunflower seeds, 1/2 cup dessicated or ground coconut, 1 tablespoon coconut oil, melted, 1 tsp agave syrup, pinch sea salt
Grind the sunflower seeds and coconut and add to a bowl with all the other ingredients. Combine with your hands until mixture is crumbly. Add a little water if needed to make more crumbly. Dehydrate in the drier until crispy or use as is.

yes, you can use ground flax if you don’t have psyllium. Probably 1-2 teaspoons will be enough. Lucuma is a natural raw fruit sweetner from lucuma berries. It is great for making custard and reminds me of cornstarch. It makes chocolate really smooth too. If you don’t have lucuma, you can do a couple of things. You can make a seed or nut milk and then follow the instructions above. The banana and pear will thicken it. You can also add a 1/8 tsp of turmeric if you want the custard yellow! Lucuma makes the custard smooth but you can use agave instead and 1-2 teaspoons coconut oil.
