Corn Chowder
It’s from Alissa Cohen’s book. I enjoyed it, I hope you do, too.
Ingredients
- 2½ cups Almond Milk
- 5 ears of corn on the cob, shaved
- 1 small avocado
- 1 pinch sea salt
Preparation
1. In a blender or vita-mix, blend all but 1/2 ear of corn until smooth and creamy.
2. Stir in the remaining 1/2 ear of corn

Ive made this before with celery, carrots and onion. it was delicious! I even added some peas as a garnish
