Sweet Potatoes
Simple holiday recipe. Thanks to Denise Thomas for the recipe.
Ingredients
- 3 sweet potatoes, cut in cubes
- 1½ cups sunflower seeds, soaked overnight, drained and rinsed
- 2 tablespoons psyllium powder, as a thickner
- olive oil, for consistency
- agave nectar, to taste
Preparation
Blend in food processor.

This is basically a side dish for holidays. I bed it could be good as a pie filling too, though – maybe sweetened a bit?

Kandace, what size sweet potatoes do you generally use for this recipe? Do you have an estimated weight? I’ll probably just end up guesstimating based on the consistency, but I truly am excited to try this recipe.
