Rawtella

A raw version of Nutella, a delicious European chocolate-hazelnut spread.

Nutella®, in its original form, was first created in the 1940s by Mr. Pietro Ferrero, a pastry maker and founder of the Ferrero company. At the time, cocoa was in short supply because of rationing due to World War II, so chocolate was very limited. So Mr. Ferrero used hazelnuts, which are plentiful in the Piedmont region of Italy (northwest), to extend the chocolate supply.

Very yummy spread on a banana!

Ingredients

  • 1 cup raw hazelnuts
  • 2 tablespoons raw cocoa or carob powder
  • 1 teaspoon vanilla
  • ¼ teaspoon salt
  • 1 tablespoon honey or agave nectar
  • 1 tablespoon coconut oil
  • flax or nut oil

Preparation

Food process raw hazelnuts for several minutes until clumpy and oily. Add cocoa/carob, vanilla, salt, coconut oil and honey/agave, and process until smooth. Stir in flax or nut oil until you reach desired consistency.

Quantities of cocoa/carob, vanilla, salt, sweetener, and oil may be adjusted to taste. This would undoubtedly work at least as well, and be a touch healthier, with nuts soaked overnight, but I was looking for instant gratification. (Having now tried it with soaked nuts – it works, but use it up fast, because it doesn’t hold the hazelnut flavor very long.)

I made this today and used raw almonds instead of the hazelnuts because that was all I had. It is sooo good !!!! I will get some raw hazelnuts soon and make a batch of this. I wonder if this would be a good base for a raw chocolate dessert. A crust maybe? Or could this be made in to some sort of raw cookie,bar?

David and I like this one alot. We have a crepe place here in Monterey that puts nutella with bananas, coconut & whip creme. We will be adding it on top of bananas with shredded coconut.

This sounds great!!! I read in a raw food recipe book that you don’t have to soak hazelnuts, because they don’t have the enzyme inhibitors. This is also true for Brazil Nuts. Yay for raw Hazelnuts!

I REALLY want to make this but the problem is that I don’t have a food processor. I do have a vitamix though. Does anyone know if I can make this with my vitamix???

Sobizaar- Even though I haven’t made this yet I think having at least one of the oils would be needed to make it creamier in a way. Well, thats what I think.

I made this in my Vitamix. A little oily for me; I’d suggest not adding flax/nut oil unless you find it necessary to blend.
