Luscious Watermelon Cooler

Makes about 4 cups

This delightful summer drink is sweet, refreshing & a lovely pink. The lemon juice & ginger add just the right punch. Watermelon is a wonder food which is delicious, nutritious, low-calorie, easy-to-find (well, in summer) & economical. It is high in vitamins A & C, potassium and the antioxidant lycopene which may help reduce the inflammation that contributes to asthma, atherosclerosis, diabetes, colon cancer, arthritis, etc. I like to tuck a bottle of this in the cooler to enjoy on a picnic or after a hike.

Ingredients

  • 4 cups watermelon, deseeded
  • 1 lemon, juiced (or 1/4 c lemon juice)
  • 1 teaspoon ginger root, minced
  • honey or agave nectar to taste (I use 2 tsp)
  • mint sprigs, for garnish

Preparation

Puree all ingredients in a blender. Garnish with mint sprigs. Note: You can use the white part of the rind along with the pink flesh (especially if it’s an organic watermelon). Enjoy!

I’ve made a variation with lime juice instead of lemon and without the agave, is was one of the best things I’ve ever tasted. The citrus and ginger really are a perfect complement to watermelon. I’m certain this variation is delicious too!

I just made this and it’s really good!!!! I left out the agave as I don’t use the stuff and I don’t feel that this drink needs any added sweetness. I also threw in a few mint leaves in with everything else instead of using it as a garnish. I’ll be making this all the time. Thanks!

Since when is watermelon good for the diabetic? I’ve given up watermelon even though I love it. Do you know of an article about this?. I do know for sure it is high glycemic. Can anyone help?

galeschler, watermelon is high in sugar. Let me ask you a question? Do you eliminate all your sugar compeletly from your diet?
