Tofu Pate

Makes 3 cups

I adjust the basic tofu pate recipe to whatever happens to be seasonal or in my fridge. Adjust any of the quantities as you see fit, as the trick is to just make it to taste. Great w/ any type of cracker or bread-like unit.

Ingredients

  • 1 pound med or firm tofu
  • ⅓ cup mayo or plain yoghurt
  • 2 stalks celery, chopped fine
  • 1 pepper of your choice (sub=2 Tbs pepper sauce), chopped fine
  • ½ red onion (or equivalent leeks, scallion or yellow onion), chopped fine
  • 1 tablespoon nutritional yeast
  • 2 tablespoons parsley (sub=carrot tops), chopped fine
  • 2 teaspoons salt
  • 1 teaspoon mustard seeds (sub=2 tsp prepared mustard), crushed
  • 1 teaspoon onion powder
  • ½ teaspoon curry powder
  • ½ teaspoon black pepper
  • 1 tablespoon honey
  • 1 clove garlic (sub=1 tsp garlic powder)
  • 1 teaspoon dill weed
  • ½ lemon (sub=2 Tbs lemon juice or apple cider vinegar), squeezed
  • 1 red or green bell pepper (Opitonal), chopped fine
  • ¼ teaspoon turmeric

Preparation

mash all ingredients together. Stores in the fridge for up to a week.

wow! I sure hope you mean nut yogurt. Regular yogurt is a big no no. Make sure to take it easy on the tofy and the nutritional yeast. I have read article stating that nutritional yeast is formaldehyde. If you want this article just ask.

Vaughn, I would be interested in seeing the article on nutritional yeast. I use it occasionally in “cheesy”-type spreads/pates, and have been fluctuating back and forth on whether it is of any value to my family’s diet. I like that it contains valuable nutrition, but hate that we are eating fungus. Thanks in advance.

Hi, Humanimal: Do you still have the article on nutritional yeast? I’ve been feeding my baby dog that to supplement his raw diet; I’m now very concerned.

humanimal: While it is perfectly respectable that you eat a completely raw vegan diet, some people eat raw dairy. While it may not work for everyone, it does work for some people. I think this recipe would be great with raw yoghurt. What is more concerting is the tofu, which is pasteurized.
