Sun Spice Cookies

makes 40 cookies.

These are so easy and can be adapted spice wise. You could even add different dried fruit, nuts or cacao nibs. Make sure you use “banana bread” bananas. You know the kind with a little brown on them, so then they are extra sweet! I like the recipe because I feel like I’m “baking.” This was my first time sprouting sunflower seeds. It was way easier than I thought.

Ingredients

  • 5 bananas
  • ½ cup raw oatmeal (you can find it on Alissa Cohen's website)
  • ¼ cup raisins
  • 1 tablespoon cinnamon
  • 1 teaspoon cardamom
  • 1 teaspoon nutmeg
  • 1 cup sprouted sunflower seeds

Preparation

In a large bowl blend bananas, oatmeal, and spices. Fold in sunflower seeds and raisins.

Drop tablespoon size mounds of dough on your sheet. Dehydrate for about 7 hours, flipping them mid-way through.

For decoration sprinkle dried shredded coconut.

Hi, How tall were your sprouts? Did you use the entire sprout/seed? Thanks :)

My sprouts were quite small. I only sprouted them for 48 hours. So, I used the entire seed with the sproutling. I took these to a Raw Food Meetup in the area today…I had positive comments,

Do you just slice the bananas or are they mashed?
