Summer tarts are wonderful dishes that can easily make for a nutritionally dense and satisfying main course. While many versions can be made by using additional ingredients, my favorite is the invigorating and scrumptious spinach tart with
marinated tomatoes! Made with cashews and almonds, this nutty tart can provide significant amounts of healthy fatty acids that can sometimes be lacking in an exclusively vegan diet. Cashews, for example, are loaded with minerals, including magnesium, manganese, phosphorus, iron, potassium and zinc.

Swiss Apricot Tart
I never noticed apricots while living in the States but after visiting Switzerland I am obsessed with their super sweet flavor. This Swiss Apricot Tart has a Vanilla Custard filling over a light White Pastry Crust and topped with lovely apricots!

Chocolate Strawberry Tart
This sinfully delicious Chocolate Strawberry Tart is a thing of beauty! It was my first raw dessert I ever made and wow did it win me over! So how is the tart so blissful tasting? It starts with a warm-flavored Pecan Crust coated with in a dark Chocolate Sauce. Then topped with fresh slice strawberries and drowned in a sweetened Strawberry Glaze. One bite of this rich and decadent Chocolate Strawberry Tart, and your taste buds will sing for more!
