a unique salad with a creamy sweet dressing
Great things are discovered by complete accident and this was one of them for me! I started out by trying to find a healthy snack for my husband's late night cravings since he decided that his usual bowl of ice cream MIGHT be putting pounds around the waist? As shocked as I WASN'T, I was on a quest! I have an abundance of ground almonds from making almond milk and I needed to get rid of them, so I originally was going to make almond butter. But I couldn't get it to the right consistency because I have a really small food processor that basically sucks. I had just bought a tub of fresh strawberries and for whatever cooking-genius reason, I wondered if I could mix it all together to make a delicious fruity nut butter!
A confirmed salad lovers new addiction! I bought a bag of fresh (frozen) wild Canadian blueberries for my smoothies, when I thought I might try something new for my dressings repertoire. It had barely lasted me 2 days because I am craving it's sweet delicious-ness! I will have to re-make it and take a picture because I ate it too fast...
A similar variation of this recipe i got from Ani Phyo but i decided to alter it a bit to suit my tastes because she used dates and a few other ingredients that i didn't have in my kitchen. Its super fast and super yummy and came together in my magic bullet in about a minute. Using the cherry tomato's gives the sauce a really nice orange-y color which looks pretty topped on a veggie pasta or spaghetti squash. ENJOY! :)
