When I make this I use goji berries and cranberries instead of currants and raisins and I soak the shredded coconut (or use fresh.)
It's delicious, and definitely a full meal, I take it to dinner parties where I know it'll be the only thing I can eat because it's satisfying for me and everyone tries it because it's so colourful.
(I often don't tell people it's raw pumpkin, they just think it's carrot.)
I just wanted to make a really simple cabbage salad, served on avocado slices. Then it crossed my mind that it might be a good idea to mix the avocado with the salad. The result was surprising:, a creamy, crunchy salad. I filled it into lettuce,
my daughter put it on bread and ate it with tomatoe and onion.
She didnt believe that it contains cabbage!
I have been inspired by a couple of the recent recipes containing pumpkin and whipped this up for lunch. It's the first time I've used raw pumpkin and it has a wonderful sweet and clean taste.
