I love guacamole with jicama chips, but I was out of jicama while having a perfectly ripened avocado. What to do? Make it "Forkin' Good"! This guac is so hearty you eat it with a fork.

Peach with grapefruit and tarragon

This is a fantastic fresh summer breakfast.
I have prepared it with peeled and shredded apples as well but I think the best combo is the peach-grapefruit-banana.
For a kick pour a tablespoon of Udo's oil on top of each portion - in this case I would suggest to skip the coconut / palm oil otherwise it will be too heavy.

Cucumber radish salad

This is a slightly altered version of the traditional Hungarian cucumber salad. My grandmother used to make it every Sunday for the whole family and I learnt it from her. Originally it is prepared with vinegar instead of lemon juice and vithout radishes, and served with a dollop of fresh sour cream on top.
I am sure it would taste great with raw sour cream; the fabulous queenfluff has a very tempting recipe here:

I AM NEW TO RAW FOOD AFTER BEING A VEGETARIAN FOR A LITTLE OVER A YEAR, I DECIDED TO MAKE THE SWITCH NOT ONLY BECAUSE IT'S HEALTHIER BUT BECAUSE THE FOOD IS SOOO ATTRACTIVE AND DELICIOUS. THIS IS A RECIPE THAT I CAME UP WITH (I HOPE LOL) IF THAT'S WHAT YOU WANT TO EVEN CALL IT OR YOU CAN CALL IT AN EXPERIMENT OR A CONCOCTION NEVERTHELESS I THINK IT IS REALLY GREAT AND CAN BE MODIFIED TO ONES OWN PERSONAL TASTE. YOU CAN CLASSIFY THIS AS A DESSERT OR A SALAD I BELIEVE, PERSONALLY I WOULD EAT IT AS A DESSERT ANY DAY. I made this to go with tonight's dinner using a carrot instead of bulgur wheat or quinoa for the starch.

I made the whole thing in my food processor and it took me about 8 minutes including cleaning the machine. Now it's chillin in the fridge and will be ready for dinner or lunch or a snack, in a wrap or on top of a green salad.
