Fruity Chia Jelly

This dish is very simple, very tasty and very filling!

I've had some chia seeds sitting in my pantry for a few months now and, after a little research, made some chia seed gel (1/3 cup chia seeds mixed with 2 cups of water or fresh fruit juice - or perhaps a nut milk).

Haha, it was very exciting to wait, and watch, those little seeds to soak up the water - a minimum of 10 minutes - and the gel can be stored in the refrigerator, in a sealed container (for up to 2 weeks if mixed with water). It reminded me of pearl tapioca which I haven't eaten since I was 7 years old!

I just put all my favorite sweet things in a vita mix and went to town. It's in the freezing right now which is really testing my patience, i need a distraction!
