I wanted a Chocolate shake with nothing in it to taint the flavor of chocolate. I also hadn't had my chia seeds for the day. Gotta get in those omega-3s! This is what I came up with. Simple and Yuuuum. : )

A delicious citrus variation of the traditional chia fresca. I love making these energizing chia drinks, these little tiny seeds pack huge energy to power you through the day. This is a great morning beverage.
This dish is very simple, very tasty and very filling!
I've had some chia seeds sitting in my pantry for a few months now and, after a little research, made some chia seed gel (1/3 cup chia seeds mixed with 2 cups of water or fresh fruit juice - or perhaps a nut milk).
Haha, it was very exciting to wait, and watch, those little seeds to soak up the water - a minimum of 10 minutes - and the gel can be stored in the refrigerator, in a sealed container (for up to 2 weeks if mixed with water). It reminded me of pearl tapioca which I haven't eaten since I was 7 years old!
Ever have those moments when you have a little of this and that and want to use things up so get inspired to make some unusial recipes, well I have them often and they often come out the best dishes. For lack of a better title I'm calling this a goji chia pudding
Tastewise this is good, looks...well chia pudding is always a blob, lol.
