To celebrate the onset of summer produce I threw these few ingredients together for lunch today and it turned out great. It just tastes like summer. And because all the ingredients are really juicy you don’t even need a dressing. I found it perfect just as is.

This recipe was inspired by wanting to recreate mint chocolate chip ice cream without the need to use young Thai coconuts. After several tries and an ice cream maker (Cusinart Supreme™ Commercial Quality Ice Cream Maker) I came up with 3 flavorful and melt in your mouth ice cream flavors. If you do not have an ice cream maker you can freeze the mixture in ice cube trays and run it through a juicer. You can also blend it up with a little nut milk. This is so delicious, I make it every day! I always have frozen strawberries in the freezer. Tastes like strawberry sorbet with white chocolate, and the crunchy sugar is perfect. Satisfies any ice cream craving. Perfect for the holidays as well.
