"Let me take you down, cause I'm going to, Strawberry Fields. Nothing is real..."Well folks, I have created a delicious smoothie tribute to The Beatles "Strawberry Fields Forever." Strawberries are such a beautiful symbol for all things fresh, abundant, and inspiring. I love to use local strawberries when in season, and they would be a welcomed addition to this recipe when made in the summer months.
In this raw food cheesecake, dried coconut is used as the bottom layer (to replace the crumbled graham crackers), macadamia nuts are used for the bulk of the "crust" layer, and cashews make up most of the "cheese" portion.
I searched and found that the Legally Raw Bar (found at http://www.thedailyrawcafe.com/2007/10/legally-raw-bar.html) would be a great beggining... I searched for special ingredient that would re-create the goey and "caramelly" taste of traditional nougat... What I found is simply delicious, fatty, extra sweet, but even better than the original version... I discovered that mixing sugar - agave, maple or honey - with melted cocoa butter ended up, when refrigerated, to a sticky cooked caramel texture... Yummy discovery!
