This looks great. Been to a cooking class with Melissa at the Terra Bella. She suggested massaging the oil and lemon juice into the kale until it is very soft, almost like wilted spinach. Worked wonders on the Kale salad she served.

This is a yummy kale salad. I made it last night and ate it in two sittings, I could have eaten it all at once but I had an audience!!! Seriously, this is going to be one of my go to's for kale from now on. Thanks.

I know remember, tachelet, seeing the host massaging her kale as well in a Rawtopia video recipe a while back she said that it rendered the cancer fighting agents more active :-)

it is also very good next day, or day after... if you still have it; for the same reason as 'massaging' it. i also add very little shreded cabbage, gives a little different texture
