Ingredients
4 zucchini
2 handfuls of grape tomatoes
2 handfuls of baby portabello mushrooms
A few tablespoons of extra virgin olive oil (cold pressed is best)
1 bunch basil
1 cup pine nuts, soaked
Sea salt to taste
Juice of 1 lemon
Pepper to taste
1 small clove garlic
Recipe Directions
1. Marinate sliced tomatoes and mushrooms in a drizzle of olive oil and some salt. Dehydrate or just marinate for a couple of hours.
2. Peel the zucchini and process with spiral slicer or peeler.
3. Process basil, lemon, garlic, pine nuts and some salt in a food processor until combined, but still chunky.
4. Toss sauce with noodles.
5. Add mushrooms and tomatoes, garnish with freshly ground black pepper. Serve and enjoy!
