Pulp of 4 young coconuts
¼ cup coconut water
1 teaspoon vanilla extract

I just made this without using any proportions, just threw stuff in the food processor til I got a good consistency. I drizzled a tiiiiiny bit of agave in and processed it down. I didn't let it go till it was completely smooth...and omg, it tastes EXACTLY like rice pudding, only better! Yum!

I made this tonight! I had to double up on the coconut water to achieve the desired consistency - but I'm also using a crappy blender. It tastes nice and light...could use a TAD more vanilla, otherwise its yummy.

I know! I usually add extra vanilla to just about any recipe... it's really best as a base to other things. Agave also helps if you have a sweet tooth like me.

I know! I usually add extra vanilla to just about any recipe... it's really best as a base to other things. Agave also helps if you have a sweet tooth like me.
