I love artichokes and missed them. What I did was take the raw artichoke heart, sliced it thin, and marinated it in some lemon juice and olive oil. Turned out pretty good. You can put it in raw wraps, pizzas, lasagnas or whatever else tickles your fancy.
We do ! : ) I buy little organic ones (1 to 1.4” long) at the Farmers Market, they are in season right now (North California), then we dip them in olive oil/lemon dressing/salt/pepper & eat them whole. These tiny ones are delicious & quite tender. May this inspire you : )
