That recipe sure looks complicated and right now I am a busy student... As of right now I am probably going to end up using olive oil and spices.
If it would be easier, throw into the blender the mushrooms, onion, garlic with a little water & evoo then taste... Measurements could be a half pound of mushrooms, med onion and one clove of garlic.... Start with enough water to get the mixture going and then add a tablespoon or so of evoo... Will probably need a little salt and some cayenne if you like it hot... smile

Zinfandel- Did you ever make the mashers and gravy? I have been thinking about making something like that but I am scared it will be nothing like potatoes and I'll be disappointed. I'm curious!
I make this recipe but use yellow carrots. The yellow are less flavorful than orange carrots. And I make a mushroom-oil gravy to go on it. I LOVE LOVE LOVE it. In fact, that sounds good - ill have that for dinner with my nut portobella patties from matt amsden's book.

This is definitely a good recipe I have made many times. I have an issue with calling foods things they are not though. It turns off many of the SAD eaters I try to feed. So I call these jicama mashers. Because as awesome as they are, they don't taste like potatos.
I have had them with EVOO, gravy and Warm Me Up Chile from RFC. But any chili recipe should work..
