Aloha and welcome to Gone Raw. Any time a recipe calls for soaking nuts or seeds it is without the shell. Here are a couple of good websites for information on soaking seeds and nuts:

For a recipe, you'd need just the seeds. But for sunflower greens, you need the shell on. I'm not sure about sprouting the pumpkin- might not be ok to eat those greens(?). But as "soaks" they are both fine (and what you'd want for a recipe) shell off.

Unless, as I stated before, you want to sprout sunflower *greens*. You need the shell on, for those. If you are unfamiliar with what I am talking about, you can see them (and read about them) here:
