Hmmmmmmmm. ........Fruit is the ideal human food. It mimics our nutritional needs like no other, and is not deficient like grains are. Also, the energy and space it takes to grow grain is disgusting. Tell her to eat fruit, as this is Our food.
I also think fruit is the best, however you have to meet people where they are at. Like, you don't tell a crack addict to just stop smoking crack. You set them up with a program of some kind, walk them through it, try to understand their struggle, be their friend.
I think a good substitute for grains would be some steamed whole food of some kind, such as vegetables, beans, or legumes. I think quinoa is a healthier substitute for rice, and if not that then at least choose brown over white. Also, nuts can be helpful because they are heavy, however you have to be careful because they are very fatty and not good to eat in large quantities, i.e. you can't make a meal of them.
Buckwheat! It's not a grain... it's a fruit seed.

I guess if she not raw she could bake them in a conventional oven, assuming she does not have a dehydrator.
