Bright citrus overtones with a creamy sweet finish, perfect for a warm summer day.
1 cup Young coconut meat, drained and scraped
1 Mango (about a cup), roughly chopped
¾ cup Water
¼ cup Sticky sweet sweetner of choice (I used agave), add more or less to taste
¼ cup Lemon juice
2 teaspoon Ginger, Finely grated
1 teaspoon Lemon peel, Finely grated
1 teaspoon Vanilla (or a bean scraped)
¼ teaspoon Sea salt
Blend all the ingredients together completely and freeze, checking so often to stir about and keep it from crystalizing. I left mine for 2 hours and came back to find it perfectly scoopable, we’ll see tomorrow. The sweetner addition keeps it smoother.
