My garden is overflowing with squashes, so I keep experimenting with different ways to prepare them. This one is simple and delicious. Sorry no picture, we ate it before I could take one-every time!
This dish can also be made without nuts if desired.
1 large yellow squash, roughly chopped
½ clove garlic, more or less, to taste
2 tablespoon strong flavored olive oil
salt and pepper to taste
juice from half a lime, maybe just a little less
¼ cup pine nuts, if you don't eat nuts, it would probably be good without them too, they add a creaminess that I like
1. Put all ingredients except spiralized zuccini in a food processor or blender. Blend until perfectly creamy. You will have to scrape the sides down and be patient. My homegrown squashes seem to be wetter than store bought, so you may have to add a little water.
2. Serve on top of the zuccini garnished with a little chopped parsley or chives for color.
