I wanted something sweet, refreshing, and juicy. This totally hit the spot.
2 tablespoon Tahini
½ Lime, cut into 2 wedges
pinch Sea Salt, to taste
½ Seedless English (Hothouse) Cucumber, cut into thin strips
1 Valencia orange, segmented, and then cut segments in half
¼ cup Large dried coconut flakes
¼ cup Raisins
Whip together tahini, lime, salt. Add enough water to reach desired consistency.
Place the rest of the ingredients in a bowl, pour the dressing over it, and toss to coat.
