I know this wont be considered well combined with the veg and fruit together but it tastes good.
½ Small White Cabbage, Finely shredded
2 Carrots, Julienned or grated
1 Apple, Julienned or grated
1 Onion, Finely sliced
1 Stalk Celery, Finely Sliced
1 Handful sultanas
½ Handful goji berries
3 tablespoon Olive Oil
2 tablespoon Cider vinegar or lemon juice
1 tablespoon Liquid sweetner
1 tablespoon Corriander / Cilantro, finely chopped
½ Mango, Chopped into smallish cubes
Mix all the ingredients together well until everything is throughly combined. Keeps for 3 days in the fridge.You can use a food processor to grate all the veg if you like or do it by hand.
