When my Mom and I were at our local health food store, we saw these kale chips that were called "Quite Cheezee Kale Chips", and they were SO EXPENSIVE, but the best kale chips ever! So I took off the ingredients, and sort of made up my own version of the one at the store, and it tastes very close to the one we bought, but a lot cheaper.
2 Bunches of Kale
1 1/2 Cups of Cashews
3 to 4 Cups of Red Bell Pepper
1/8-1/4 Cups of Lemon Juice (you can also add as much lemon juice the mixture until it tastes like a cheese)
1-2 TBS of Nutritional Yeast
Pinch of crystal salt
Put all of the ingredients (except the kale) in the food processor until it's really smooth and not chunky. Get some fresh kale, rip it into chip size (without the stem), toss the mix with the kale. Then, when you're done, put the kale on mesh trays on the dehydrator. Put the dehydrator on 145 for 1 hour only, it won't destroy the enzymes, then after that hour, put the dehydrator on 105 or 110 for 6-8 hours or until crispy. Then it's all done! YUM!
