It's great as a either a salad or salsa with your favorite raw chips
3 ears of fresh corn
1 stalk celery
1 small zucchini
1 small mango, peeled and seed removed
1/2 red bell pepper, seeds
removed
1 small onion
2 cloves garlic
1/2" peice of ginger root, peeled and chopped
1/4 cup cilantro,
chopped
juice from 1 large or 2 small limes
Dash each of salt, pepper, cumin and red pepper flakes
Cut corn off of cob and put in large mixing bowl. Dice celery, zucchini, mango, pepper and onion and add to corn. Run garlic and ginger through garlic press, letting juices fall into the bowl as you press (if you don't have a garlic press, mince both and add to mixture). Add cilantro, lime juice, salt, pepper, cumin and red pepper flakes adjusting amount to taste. Mix well and enjoy.
