I AM NEW TO RAW FOOD AFTER BEING A VEGETARIAN FOR A LITTLE OVER A YEAR, I DECIDED TO MAKE THE SWITCH NOT ONLY BECAUSE IT'S HEALTHIER BUT BECAUSE THE FOOD IS SOOO ATTRACTIVE AND DELICIOUS. THIS IS A RECIPE THAT I CAME UP WITH (I HOPE LOL) IF THAT'S WHAT YOU WANT TO EVEN CALL IT OR YOU CAN CALL IT AN EXPERIMENT OR A CONCOCTION NEVERTHELESS I THINK IT IS REALLY GREAT AND CAN BE MODIFIED TO ONES OWN PERSONAL TASTE. YOU CAN CLASSIFY THIS AS A DESSERT OR A SALAD I BELIEVE, PERSONALLY I WOULD EAT IT AS A DESSERT ANY DAY. 1 MEDIUM TO LARGE ZUCCHINI
1 GOOD SIZE HAND FULL OF RAISINS (ADD MORE IF YOU LIKE)
I TABLESPOON OF AGAVE
NECTAR
1 TEASPOON OF TURMERIC
1/2 TABLESPOON OF NUTMEG (OR TO TASTE)
CHOP THE ZUCCHINIS INTO SMALL BITE SIZE PIECES, ADD THE SHREDDED CARROTS AND MIX WELL WITH THE RAISINS. ADD THE AGAVE AND TURMERIC ONE AT A TIME SO THAT THEY COAT THE CARROT MIXTURE THEN ADD THE NUTMEG MIX WELL AND ENJOY EITHER AT THE PREPARED TEMPERATURE OR CHILLED..
THIS IS MY FIRST SELF MADE PROJECT I HOPE THOSE WHO TRY IT FIND IT AS TASTY AS I DO, IT ALMOST REMINDS ME OF THAT OLD RICE PUDDING EXCEPT WITH VEGGIES LOL COULD BE ME YOU DECIDE.
