Almond Delight
I came up with this after a visit to my local raw cafe and tried their version. It was soo good! And i think mine is comparable…if not better! :)
3 cup Dry Almonds (soaked and re-dehydrated or unsoaked)
2 tablespoon Coconut oil, warmed
2 cup almond
butter
¼ cup coconut oil, warmed
¼ cup agave nectar
.33 cup shredded coconut
½ cup un soaked cashews,
chopped
½ cup raw granola, (optional)
Combine first 2 ingredients in a food processor until creamy to make the Almond butter needed..or you can use store bought, however if you are making the almond butter solely for this recipe, you can add the whole amount of coconut oil (2 TBS + 1/4 cup)
Then blend the next 3 ingredients in the food processor. Add coconut and chopped cashews and pulse until well combined. You want to keep pieces of cashews intact
Spread mixture into a wax paper lined loaf pan, top with raw granola and place in fridge to firm up. When firm, slice into 1” cubes.
Variation 1 – pour mixture into individual tartlet pans and top with granola
Variation 2 – line 9” pie plate with granola to form a crust and pour in almond mixture. Top with more granola and
firm up in fridge.
Variation 3 – top with fruit puree

HI - I listed it twice in case you are making your own almond butter the 2 tbs is for that. IF not and you are using store bought then omit it.

You have coconut oil listed 2 times. I guess I am missing something. Was there something else?
I would substitute coconut butter instead of oil.
What about adding cacao butter? THe nuts and teh cacao butter sounds great!
I would also be very careful with shredded coconut as the harder the coconut flesh the harder to digest. In addition, the whole point of living foods...easy to assimilate, easy to eliminate.
I think this has merit and could use some fine-tuning.
Also, I wonder at 1/4 cup of agave. That seems over the top. That is, unless there is some sweet tooth out there! LOL

Sounds great - but there are just fatty ingriedients! Crazy, I would love to try it - but my stomach says already: no - undigestible!
