Asian Slaw
So basically I just got home from college for the weekend and arrived to see beautiful veggies that my mom bought me! Not having access to good raw food for awhile I needed to make a delicious creation for dinner and this is what I came up with.
Slaw:
1 zucchini
1 carrot
1/2 cup re-hydrated seaweed of your
choice
giant handfull of oyster mushrooms
Dressing:
1 tbsp tahini
2 tbsp nama shoyu
1 tbsp apple cider vinegar or rice wine
vinegar
garlic to taste
ginger to taste
sesame seeds for sprinkling
1 tbsp agave syrup
First shred the carrot and the zucchini and place in bowl with hydrated seaweed and oyster mushrooms. You can either do this by hand grating or putting it through the processor (I grated). Mix up all the dressing ingredients and add more vinegar/water if it's too thick for your taste. Sprinkle with the sesame seeds. I hope you enjoy it as much as I did!

I just made this and accidentally forgot to put in the seaweed... It was good, but when I finally remembered the seaweed, it was GREAT! I used some toasted seaweed (not raw, but still healthy) and the dish is filling and delicious.
