Bell Pepper Rainbow Delight Salad
I never thought I would LOVE this but I made it up one day and it was scrumptious. I teach a raw food class and feed it to them and they loved it too. It is so easy to make that you could easily make it in a pinch of time. Here goes.
Cut up yellow, red, orange, green bell peppers, purple cabbage—shredded with mandolin, red onions or scallions—and anything else that is crisp and crunchy. Just mix up in a bowl and add sundried tomatoes dressing..The Dressing is what makes it so scrumptious.
Sun dried Tomato Dressing…........
1/2 cup olive oil
1/4 cup raw apple cider vinegar
1/4 cup nama shoyu
1/4 cup fresh lemon juice
1/2 cup sundried tomatoes.Blend in a blender (I have Vita mix) This is Matt Amsdem’s recipe….I put less vinegar than he does. Enjoy
