Ok so I got the base idea of this salad from Jennifer Cornbleet's Mediterranean Kale salad.
but personally I think mine is WAY better. Like way way way way way lol
1/2 of a bundle of kale
1/8 cup minced red onion
1/8 cup chopped green onion
1 small cucumber, cut into this slices
pinch of minced sun dried tomatoes
1 minced garlic clove
1/4 cup chopped kalamata olives
pinch of dried basil
1/2 of a lemon
1 TB of olive oil
pinch of sea salt
Cut the kale up into small workable strips/ pieces. Also trim stems off. Squeeze the lemon over it, add basil, salt and olive oil. Take your hands and massage the kale. Me nice & rough. This will make your kale nice and tender and SO yummy.
ok, now add the red onion, green onion, cucumber, sun dried tomato, garlic clove and olives. Toss and eat up
I really love this. I'll be eating this a lot. Sadly my olives are not raw, they the kind from trader joes, cured with salt. but I am not 100%, I am just high raw.
I make the EXACT same one. Sometimes I have it over zuccini noodles for a delicious pasta dish : )
