Caramel Apples

1-2This was something I came up with in trying to find a sweet snack that was low fat, quick and easy. After getting it just right, I offered samples to the meat eating men in the house and they all said it tasted just like caramel apples! They were right. It was gone in about 5 minutes. You may have to play with it to get the consistency you want.
Ingredients:
1/2 cup raw sunflower seeds
4-5 raw dates
squeeze of lemon juice
1/4
of vanilla bean seeds or 1 tsp vanilla (If you use the bean, let mixture set for a bit to meld flavors.)
And Apples!!
Preparation:
Process seeds in a food processor, then add dates, lemon juice, and vanilla. Mix well until dough like ball forms. I liked it thicker because it was a lot like caramel. Spread mixture onto apple slices and enjoy!

This goes in my 5 ingredients or less recipe file. We frequently do a "covered dish" lunch at school. I think I'll take this next time, but with apple slices and the caramel sauce as a dip. Yummmmmmmm!

I just made this but I substituted pumpkin seeds for sunflower seeds. YUMMMM! it definitly tastes like caramel apples. I love anything that I can dip my apples into and this is great! Thanks!
