Carrot Chips
Light, crispy carrot chips that can be served with your favorite dip or salsa, or just plain. The recipe was inspired by a very similar recipe for corn chips from Frederic Patenaude. Simple to make and very yummy!
4 cup raw carrots, finely chopped or shredded
½ cup flax seed, ground
¼ cup hemp
seed
1 teaspoon sea salt
½ cup purified water, (It may require a little more)
Grind carrots in food processor to a smooth pulp consistency. Remove pulp and transfer to a mixing bowl. Add remaining ingredients and mix very well. (You may need to increase the water content slighlty). Spread mixture onto teflex about 1/4” thick or so. You want them to be thin enough to be crispy, but thick enough to hold their shape once dehydrated. Dehydrate for approximately 8-12 hours or more, depending upon desired texture of chip. Enjoy!

I made them this week but didn't have hemp seeds, so I just added more flax.. It was great!! Very crispy and and light. And soooo easy! Thanks for posting!!!

Is that a half-cup of ground flax-seed or a half-cup of flaxseed, then grind it?

these could be my saviour..are they crisp and crunchy..I need a crispy slasa dipping chip...

Sesame or chia are good subs, even additional flax seeds not grounded could be a good replacement.

Hemp seeds are not necessary. They just add more health benefits and flavor, but you can certainly make the chips without it.

mandelicious- that's true. they are also similar to pine nuts, so that might be a good sub.

hemp seeds have that great soft texture too... but it seems like sesame would work in this recipe... or maybe sunflower...

i'm only guessing of course... =) (when i use hemp it just adds another taste)

any other seed would be fine. sesame would probably be most similar i'd imagine.

I can't find them close by either. I was thinking about sesame or chia. I haven't used hemp seed, so I don't know what would substitute the best. Any ideas?

Sounds delicious.....you think i can do it without the hemp seeds?..dont have any and where I live i need to drive at least 2 hours to get my "healthy" supplies..lol
