I didn't have soaked almond to make almond milk, so I used almond butter. I also added garnishes for a special touch. No picture... I no longer have a digital camera but I'm in the market, so if anyone has a good reco (under $120), let's hear it.

Thanks, Scott. Nikon makes a great camera. I'll look into the Coolpix. Hope you like the soup. You may want to kick up the spices a notch... since my fast, I'm a spices lightweight!

This is a wonderful dish to serve with hearty "cheese" flavored crackers!

This looks good and will surely be what I do with my head of cauliflower sitting in the fridge right now. Also, Nikon Coolpix cameras are pretty reasonably priced (around $120) and pretty good. I've been using one for a few years with no complaints - though I am a light user.

mmm... that was good. I ate it cold, and I added a lot of garnish to make it chunky.

I hate to juice for a recipe, too... but I've been juicing daily lately. Also, Wendilou, you might want to try the Mock Tuna Salad recipe on this site if you haven't already, as a use for carrot pulp. That recipe makes juicing carrots totally worth it!

I tried to make this for one person. Instead of juicing the carrots and ginger, I just put them in the blender whole. In order to get the whole carrots blended, I had to add quite a bit of water, which made the flavor not as intense as I think it is as written. Nevertheless, the flavor of the soup is yummy and I will definitely make it again (according to directions!). I also found the spices quite warming and after tasting it, chose not to heat the soup. Thanks for sharing this, Pam. :)
