Curried Cauliflower Soup

I'm not a big raw soup eater, but when I bought 3 heads of cauliflower for green popcorn at Trader Joe's this afternoon, the clerk asked if I was making soup. Hmmm, cauliflower soup sure sounds good, particularly since it was 12 degrees outside today! This recipe is inspired by one found on Rhio's site. I didn't have soaked almond to make almond milk, so I used almond butter. I also added garnishes for a special touch. No picture... I no longer have a digital camera but I'm in the market, so if anyone has a good reco (under $120), let's hear it.

Ingredients: 

1/2 c. carrot juice (about 3 medium carrots)
2 inch piece of ginger, juiced
2 cups cauliflower, roughly chopped
1/2 avocado
1/2 T. almond butter
1 c. water
1/2 t. sweet curry powder
1/2 t. garam masala
salt and cayenne pepper, if desired
Garnish:
sweet red pepper, finely chopped
cauliflower, finely chopped
sweet onion, finely chopped
nutritional yeast (optional, not raw)

Preparation: 

Blend all ingredients except the garnishes. If you like, either blend until warm or place in dehydrator. Spoon soup over garnishes in warm bowl; sprinkle nutritional yeast on top, if desired. Serve with a warm spoon.

I hate to juice for a recipe, too... but I've been juicing daily lately. Also, Wendilou, you might want to try the Mock Tuna Salad recipe on this site if you haven't already, as a use for carrot pulp. That recipe makes juicing carrots totally worth it!

I tried to make this for one person. Instead of juicing the carrots and ginger, I just put them in the blender whole. In order to get the whole carrots blended, I had to add quite a bit of water, which made the flavor not as intense as I think it is as written. Nevertheless, the flavor of the soup is yummy and I will definitely make it again (according to directions!). I also found the spices quite warming and after tasting it, chose not to heat the soup. Thanks for sharing this, Pam. :)

Thanks, Scott. Nikon makes a great camera. I'll look into the Coolpix. Hope you like the soup. You may want to kick up the spices a notch... since my fast, I'm a spices lightweight!

This looks good and will surely be what I do with my head of cauliflower sitting in the fridge right now. Also, Nikon Coolpix cameras are pretty reasonably priced (around $120) and pretty good. I've been using one for a few years with no complaints - though I am a light user.

This is a wonderful dish to serve with hearty "cheese" flavored crackers!
