Curry Cumin Salad Dressing

Serves 2 (on salad)How to make a non-salad-lover into a salad-lover: woo them with wonderful dressings. No two ways about it. Also: cut the leaves up small, so the dressing doesn’t get all over their face.
Ingredients:
½ cup olive oil
¼ cup cider vinegar
1 tablespoon raw
honey
½ clove garlic, pressed
1 teaspoon whole cumin seeds
1 teaspoon curry
¼ teaspoon yellow mustard
powder
1 pinch sea salt
1 dash dried thyme
Preparation:
1. Mix everything together in a bowl.
2. Adjust to taste.
3. Drizzle over greens—ideally lots of baby spinach cut up for manageability
with some sprouted lentils (about 1/3 cup) thrown on top for added flavor, texture, and nutrition.
4. Toss like you’ve never tossed before.
5. Consume with glee.

I had this on my lunch salad today... added an extra tsp. of curry powder and lowered the oil to 1/4 cup (added 1/4 cup water). YUMMY!!! I had it over organic mixed greens with cashews, raisins & avocado. Fabulous!

Delicious! We had it over spinach with walnuts and even our little girl finished her salad. The longer it sat on the spinach the better it tasted...thanks for sharing!
(I didn't have cumin seeds so added 1/2 tsp cumin powder)
