How to make a non-salad-lover into a salad-lover: woo them with wonderful dressings. No two ways about it. Also: cut the leaves up small, so the dressing doesn’t get all over their face.
½ cup olive oil
¼ cup cider vinegar
1 tablespoon raw honey
½ clove garlic, pressed
1 teaspoon whole cumin seeds
1 teaspoon curry
¼ teaspoon yellow mustard powder
1 pinch sea salt
1 dash dried thyme
1. Mix everything together in a bowl.
2. Adjust to taste.
3. Drizzle over greens—ideally lots of baby spinach cut up for manageability with some sprouted lentils (about 1/3 cup) thrown on top for added flavor, texture, and nutrition.
4. Toss like you’ve never tossed before.
5. Consume with glee.
