flowering zucchini with pesto

Servings:
the recipe above makes a serving for 1 (as a main dish).tasty and fresh – but very filling. my garden is producing zucchinis and tomatoes like crazy, so this was a little experiment to try and eat them before they start going bad. :)
Ingredients:
½ medium size zucchini
1 medium size tomato, chopped
1 tablespoon pine nuts, soaked 15
minutes
2 tablespoon cold press olive oil
¼ cup fresh basil
1 tablespoon water
½ teaspoon fresh garlic, minced
Preparation:
i used the flat blade on my spiral slicer to make the zucchinis into flowering strips. i chopped up the tomatoes and placed on top. for the pesto sauce – i put the rest of the ingredients in my magic bullet and whipped up. i don’t like a lot of olive oil, so i added some water. as you can see, my pesto is a bit thick, so you could add more olive oil if you like.

i have a 5-cup food processor that i use when making soups and larger blended items. however, i use my magic bullet a lot when whipping up smaller batches (like pesto or mayo), or making almond cheese. plus, you just switch out the containers, so you can refrigerate whatever you make (if you have leftovers) by just screwing on a lid and popping it in the fridge. i definitely think it's worth the investment - and so much easier to clean!

Quick question maihio, how do you like your magic bullet? I have a 3 cup food processor but it seems like the bullet would be so great for quick sauces and pestos, can't decide whether or not to invest in one... could you provide your opinion or possibly just some clarity?
