Heavenly Endive Salad
This salad came together in a flash of inspiration and a hint of desparation – I was hungry! It has turned out to be one of my favourites that I love to share. I regret not having a picture to share with you – it is quite a lovely dish – but I couldn’t wait to eat it!
I know the white basalmic vinegar isn’t raw, but it can be easily replaced with fresh lemon juice if you prefer. The quantities can also be modified to your tastes and increased to make enough to share. Enjoy!
1 Belgian endive, sliced
¼ English cucumber, quartered and sliced
1 firm, ripe avocado, pitted, peeled and
sliced
handful of cherry tomatoes, halved
couple turns of fresh ground pepper
couple shakes of sea salt
splash of white balsamic vinegar or fresh lemon juice
Place endive, cucumber, avocado and tomatoes in a bowl. Add freshly ground pepper, sea salt and vinegar or lemon juice. Toss gently…admire and enjoy!

Endive is an often overlooked vegetable! In it's whole state it's either white with yellow edges or white with red edges and shaped like an oblong cabbage with tightly packed leaves. They aren't really big, about 4 to 5 inches long and 3 inches at the widest part. They are commonly filled with a raw pate and served as appetizers - I'll post my favourite soon - but are also great just added to a green salad for variety. If you ask your grocer, they can point them out in the produce section.

It is like lettuce. It is a leafy green that looks like arugula.
