I read the ingredients on a Lara Bar and they were “Dates, Pecans, Salt”. I thought, hmmm….I could do that. So I did, and it worked! Sorry there aren’t measurements. Just eyeball it to the right consistency.
Puree the dates in the food processor until smooth. Add the pecans (and a dash of salt) until the consistency is right. It should be firm enough to ball up on its own, but it shouldn’t stick to your hands. Either roll into balls or press into a pan and cut into bars. You can also had other ingredients to taste, like cinnamon, or different nuts.
