Serves 2; makes 24 ounces
Ingredients
1½ cups cantaloupe or honey dew melon (large cubes)
Water from 1 young coconut
2 inch piece of vanilla bean
Recipe Directions
1. Halve a cantaloupe or honey dew melon, scoop out the seeds, and cube 1 1/2 cups into a blender.
2. Add the water from 1 young Thai coconut. Scrape a 2 inch piece of vanilla bean and blend on low/medium setting until you have a smooth consistency (1-2 minutes).
3. Pour the mixture into a glass and place in freezer for 5 minutes.

By iang83This is an amazing and simple breakfast dessert that tastes just like a vanilla milkshake.
Quick to whip together first thing in the morning. Very filling and packed with energy!
Try placing your blender in the freezer beforehand.
The foam is the best part of this drink so make sure you leave that on top!
