More Raw Oreo Type Cookies!
Last night I was dreaming of Oreo’s, so when I woke up this morning, the first thing I did was get out my food processor and made-up a batch of these babies! MY FIRST RAW RECIPE! Then I noticed there were already a bunch of Oreo type recipes here.. oh well, one more can’t hurt right? Also, in all my excitement, I didn’t measure… so these are all
approximates!
Sorry about the sucky pic… I am not a photographer, and my camera SUX! LOL!
1 cup Nut Meal/Flour, I used Hazelnuts...MMMM!
¼ cup Shredded Coconut
4 Dates,
Pitted
1 teaspoon Vanilla Extract
1 dash Sea salt
2 tablespoon Raw honey, maple syrup or agave
.33 cup Cacao
powder
.66 cup Coconut butter
1 teaspoon Vanilla Extract
½ teaspoon Lemon juice
2 tablespoon Tahini,
optional
1 tablespoon Honey, maple syrup or agave
1. Blend together the first 7 ingredients in a food processor until it sticks together somewhat like dough.
2. Ball up the dough
and flatten or roll out and then cut into the shapes you want. I used the top of a small glass to cut out the circles.
3. Put in dehydrator at 105 degrees until
crispy.
4. Meanwhile mix together the last ingredients and do some tasting to get it to your liking. Don’t store in fridge cause it gets REALLY HARD! OOPS! :)
*remember, you don’t need to use my filling! There are probably LOTS of fillings on this site or you could use plain nut butters, chocolate ganache, or whatever! The possibilities are endless! YIPPEEE!
5. Spoon filling onto a cookie and smoosh another one on top. EAT!

mmmm! these are cooking up in the dehydrator right now, but I can't stop munching on the dough. I used mixed raw nuts (pecans, brazil nuts, almonds, and hazelnuts) and 1/2 carob and 1/2 cacao. I also added cinnamon and used a little water to form the dough.
Thanks!
