Pico de Gallo
2 tomatoes, skinned, sees removed, and chopped into 1/4 inch chunks
1 maui onion, peeled and chopped into 1/4 inch chunks
1 red pepper, seeds removed and chopped into 1/4 inch chunks
1 lime, juiced
2 stalks celery, finely chopped
place the tomato chunks between several sheets of paper towell and press tightly. squeeze the juice out of them
mix the chopped tomatoes, onions, and pepper in a bowl. squeeze the lime juice over the top and add the celery.
mix everything together well, cover, and let marinate for a few hours before serving.
