They (I don’t care who!) say it is beneficial to eat a little dark chocolate every day, so here is my “go to” recipe when the need for something chocolatey arises. A Vitamix will allow you to whip up this delectable dessert in less than 1 minute, but if you haven’t made the investment in this powerful machine yet, any high speed blender or food processor will do. I know there are many raw pudding recipes out there but what makes this recipe so unique is the Grade B maple syrup (not raw, but rich in vitamins and minerals). Although agave and other grades of syrup will work, Grade B maple syrup gives the pudding a richer, almost caramel-like, flavor. Prepare to be amazed!

Ingredients: 

2 medium avocados (about 1 pound)
1/4 cup plus 2 Tablespoons Grade B maple syrup (not raw)
2 Tablespoons filtered water*
2 Tablespoons raw chocolate powder*
2 teaspoons vanilla
1/8 teaspoon sea salt

Preparation: 

Remove avocado pits and scoop avocado into Vitamix or your preferred blender/food processor. Add remaining ingredients and blend. This pudding freezes well. Just thaw, stir, and serve.

*Sometimes I omit the water and freeze the pudding to make chocolate ice cream.
*If your body does not agree with raw chocolate, Hershey's Special Dark Cocoa can be used, although it is not raw.

Wow, that was really good. I never actually liked chocolate pudding before, but I was craving something chocolatey and happened to have two avocados and the rest of the ingredients (a rare thing, since I've only just started a raw diet)-- this was really really easy and tasted amazing. Even my family agreed :)

When I make this kind of pudding (which I do often) I use dates as the sweetener. They are raw, nutritious, and yummy!

Thanks for reminding me about maple syrup not being raw! I have changed that in the recipe.

To keep this recipe raw, you can sub a nice ripe banana for the maple syrup (which isn't raw), and omit the water.
I try to eat at least one avocado/day, and this is a lovely way to do it. It is good with chopped walnuts on top, too.
