Raw Spicy Zucchini Chips
Eating raw zucchini is easy with this recipe. Just make sure you make a lot because they will disappear.
Before I even started eating a raw food diet I tried making dehydrated zucchini chips
and I wasn't too excited. You don't have to be on a raw vegan diet to enjoy these yummy treats.
I found when I think they are done to dehydrate even longer and they are even better!!

Marinade:
4 Tablespoons fresh squeezed lemon juice
2 1/2 Tablespoons extra virgin olive
oil
1/2 tsp paprika
1/2 tsp celtic salt
1/4 tsp cayenne
2 1/2 tsp onion powder
2 1/2 tsp onion
powder
1/2 tsp basil
1/2 tsp oregano
2-3 zucchini
Slice your zucchini with a madeline very thin.
Mix marinade and toss with sliced zucchini and lay out on dehydrator trays in a single layer.
Dehydrate 14-20 hours.

i made a batch of these today for thanksgiving and my non raw family loved them! my stepdad said "i was tasting it just to be nice but i actually like it almost as much as potato chips." i followed the recipe exactly because i had everything in the house already. when does that ever happen??

This is the best recipe!!! I sliced a large sweet onion on the mandolin and used the same recipe....wonderful!!!! I also tried eggplant but so far the zuchinni and oinion have been the best. Oh, I tried a potato but it was like eating hard tack! So week end with company coming I am making a second batch of the onion and zuchinni.

I added a touch of smoked paprika to the spice mix, but no other changes. These were fantastic! Like potato chipped merged with fried zucchini only flavorful and with a slight kick. I only wish they didn't shrink so much - I wanted more.

These were soo good! I added garlic powder, cracked black pepper, and a little bit of Tony's Seasoning(we're from Louisiana and love spice).
My daughter and I ate the whole batch in one sitting and I'm going back to the supermarket to buy more zuchini's tomorrow. My daughter said that she wants these everyday after school and I couldn't be happier that she loves these super healthy chips.

These are WONDERFUL! I only got 5 however, because my husband ate the entire batch before I got home from work. Lucky for me I had stopped at the market and picked up several more zuchinni! More chips for me!

Is this 5 tsp of onion powder or is that a duplicate entry? Anyway, I just did half garlic powder and half onion and WOW! What a fantastic recipe. I'm pretty sure these could fool a non-rawbie! Keep up the great kitchen creativity. Thanks
