Salt and Vinegar Potato Chips

Salt and vinegar potato chips. A variation on Rawkidchef's "potato cakes" recipe. You could also try this with sweet potato. I am interested to try it with yuca but don't know how well that would work with the spiral slicer... Makes a great crunchy, salty snack.

Ingredients: 

4-6 small potatoes, rinsed
apple cider vinegar
1-2 tablespoos olive oil
salt to taste

Preparation: 

Using a spiral vegetable slicer with the flat blade, slice potatoes into very thin slices (they look more like potato rings). Make sure to cut a slit halfway through the potato first so the slices aren't attached.
Soak potatoes in apple cider vinegar (or other raw vinegar) overnight (about 12 hours) to begin breaking down the starch. If you skip this step the chips will have a chalky texture.
Drain and rinse potatoes (save vinegar for another batch!) and toss with the olive oil. Spread flat on dehydrator sheets and dry for at least 12 hours (until crispy.)
Sprinkle with salt. (The salt could be added before the dehydrating but I found it was easier to gauge how much I wanted after they were dry.)
Eat!

thanks for the recipe. i am making sweet potato now but, i soaked them for 24 hours and the potato tastes like vinegar. i guess i soaked them to long but, i tasted the potato at 10 hours and they were still a little chalky so i left them in vinegar overnight. oh well, we'll see what happens when they're done.

i tried it also with the sweet potato..hmmmm, i'm soaking some regular potatos now...see how that goes. i forgot the olive oil step, wich i think could have helped a bit. haha. i may even try the nutrional yeast too. kleine i definatletly recomend the soakimng them in vinigar part :)

I tried making sweet potato chips and they did not turn out well. Would soaking them in vinegar help?

I don't know how many times you can use the vinegar over... I've been keeping it in the fridge after I use it for chips, though. I think I've used mine at least four times already.

Thanks for this recipe. I so crave carbs and am tired of eating fruit and nuts for a snack. I love using the spiral vegetable slicer to make these. Makes it so much easier. I sprinkled nutritional yeast on these and they tasted great. How long do you think you can keep reusing the vinegar?

I made these yeaterday so they where ready when I got home from work. They are so yummie like crisps without all the crap. Yummie, I have sweet potato in the dehydrator today for tea. Can't wait to try them.
