Spinach leaf, Orange and Avocado Salad

Serves 4Delicious, vibrant dish… rather yummy ~ like sunshine in the mouth!
Ingredients:
¾ cup chickpeas or chickpea sprouts
2 clove garlic, crushed
1½ tablespoon lemon
juice
1½ tablespoon orange juice
2 teaspoon cumin, ground
1 pinch cayenne pepper
¼ cup extra virgin olive
oil
1 pinch sea salt
2 oranges, skin & pith removed and finely sliced
4 cup baby spinach leaves (English spinach)
1 large, ripe avocado, pit
& skin removed, cut into chunks
Preparation:
Mix together garlic, lemon and orange juices, cumin, cayenne and olive oil.
Season to taste with salt and pepper and set aside.
Place chickpea sprouts, orange slices, spinach leaves and avocado in a large bowl and gently toss together with dressing.

This was good, great idea. I just made it except I processed the oranges and the chickpeas, placed some spinach on a whole wheat pita scooped it on to them, tossed some avocado chunks into the mixture and then drizzled the dressing over it. It was delicious!
